I have a psp 2003, it has a TA-088 V1/V2, with 3.90 official firmware.
I am wondering whether it will be easier to use chickhen to get cfw, or going through the full process to get 5.00 M33?

It would be easier to use HEN. First you need to update to 5.03 ofw, just google and download it.
Then download the HEN files.

Now you can either go with cfw's 5.03 GEN-a for HEN or download Hellcat's recovery flasher
and flash 5.00 M33 while in HEN environment. (You would also need to download the 500.pbp file)
