It's a Sony issue - they aren't showing on PSN either when viewing your profile through a PS5, so we can't really do anything. Generally RDR2 seems to track fine so maybe it'll just take some time before the hours played will start showing up. I've had some games on PS5 where it took 3-4 days to register the time played, and other times it updates instantly.
