I'm under Vista at the moment so the exact steps I'm not too sure of but the general idea is to go under the Folder and Search options (while viewing a folder in Explorer) and go to the view tab, then uncheck the option to hide extensions for known file types - I always disable it first

In the XP explorer window under Tools, you'll find "Folder Options". Then it's like Frozen said; view tab and uncheck the "Hide extensions for known file types" option.
