I believe the only difference is the price (Greatest Hits are given to games after a period of time and their price is lowered at the same point)

They also sometimes ship with bug fixes. One of the GTA games on PS2 did this, I can't think of other examples, but I'm sure there are some.

Discs are different colour to original?
Cheaper.
That's about it. Also bugfixes sometimes.
