i've never played one of these games, what exactly is the play mechanics for it, is it just a bunch of dialog choices, selecting evidence?, or is their something more that i just never really understood, or was conveyed for why it seems like a popular series?

The main appeal of the series is the comedy and the puzzles. You can go about searching crimescenes for evidence and interview different people. Depending on anything you show them or what questions you ask can result in different reactions. The first Ace Attorney is available on iOS (probably Android as well) which I'd recommend getting.
Exactly what Menace said. I've never been big on point and click style adventure games but I love the Ace Attorney series. The cases are compelling, it's actually rewarding when searching for clues or pinpointing contradictions. It has a really likable cast of characters too. Each game has improved over the last so I'm really looking forward to what's in 5.
