I linked my Switch account and it only showed 20 recently played games for 800 hours, even after i opened all those games on Switch and manually reset the scrapes.

Steam recently changed the default privacy settings for all users. This may impact tracking. Ensure your profile has the correct settings by following the guide on our forums.

Due to Limitations on Nintendo's end, Exophase can only see the last 20 games and may only update every few hours.
Additionally, there are weird things that happen with using Multiple Switch and/or Switch 2 consoles.

No. Once it has been seen the game will remain on the list.
On my Profile: all 65 games that Exophase has seen is shown.
